Glycerol monostearate E471 improves the texture, shelf life, and stability of products.
This beige powder, derived entirely from vegetable fats and oils (sunflower), is non-toxic and easily assimilated by the body.
It acts as an emulsifier, mixing and stabilising oily and aqueous phases. This results in a smoother, more supple texture and a more even distribution of flavours, enhancing taste.
It also helps preserve freshness in baked goods (bread stays soft for longer).
Other effects:
Increases the volume of cakes.
Prevents fat crystallisation.
Complements the action of soya lecithin (recommended dosage: 5 g/kg).
Applications:
Dissolve in hot water, stirring vigorously before adding to the mixer or kneading machine.
Alternatively, dissolve directly in fats during the production process (readily soluble in fats).
