Coconut milk powder, with its natural and intense aroma, is widely used in baking, confectionery, chocolate making, and more.
The process begins with the extraction of fresh pulp from coconuts (origin: Sri Lanka), which is then pressed to obtain a creamy paste.
After filtering, maltodextrins and sodium caseinates are added.
The solution is homogenised and then spray-dried in an atomisation tower to transform it into powder.
Use:
Dosage: 5 to 15% of the finished product
Dilute in hot water before use, or incorporate directly to thicken a preparation while enhancing its flavour
Areas of application:
Muffin, cake, and pancake batters
Flans, creams, and ice creams when added to milk or cream
Smoothies and exotic savoury dishes
