Before the first use, the aluminium baking sheet must forego a "seasoning" step. First, it must be heated to a temperature of 100°C, then cleaned with a cloth. Repeat the operation 3 times. Then, grease the baking sheet with a good quality cooking oil or fat and put it in the oven for 2 hours at a temperature of 180°C. Finally, use a cloth one more time to clean and grease it again. We recommend that you grease the Baking sheet before each use.
It gives the puff pastry a nice even bake and the top layer comes out flush and super clean. I normally used baking and the centre would sink after baking. This tray gives a consistent finish. It would be great if they also sold rings that fit inside the tray as an accessory. At the moment I am making puff pastry discs, so would love to use a perforated ring, that fits inside the tray.
