Prepare all the ingredients.
Mix sugar and water in a sauce pan.
Add a large orange peel cut out with a peeler, the split vanilla bean and lemon zests. Cook in syrup for 5 long minutes.
Peel the fruits.
Using a skimmer, place them in boiling syrup.
Cover using a parchment paper lid and leave to poach a while.
