Vegetable charcoal black colouring powder (E153).
Soluble in fat: butter, white chocolate, etc.
The high concentration of this food colour requires an accurate dosage.
Food colourings should be tested before use, particularly in extreme conditions (temperature, light, storage...).
Possible interactions with other components or ingredients or with manufacturing processes cannot be foreseen.
Recommended quantity: between 1 and 10 grams per kg.
Nota :
1 - May have an adverse effect on activity and attention in some children.
2 - Black and white are the hardest colours to obtain in pastry.
We suggest you to use black colour powder in a dark preparation (containing chocolate or cocoa powder for instance) for best results.
When starting with a white preparation such as meringue, it is almost impossible to obtain an intense dark colour with powder: it will turn grey, or dark grey at best.
