Pure amber maple syrup is obtained by concentrating maple sap collected in early spring, when night-time frosts give way to daytime thaws in a region straddling Canada and the United States.
Quebec alone produces nearly 80% of the world's supply.
The syrup is made by simply evaporating the sap until it reaches the ideal sugar concentration of around 66° Brix.
On average, 30 to 40 litres of sap are required to produce 1 litre of pure maple syrup.
Its colour and flavour vary depending on the degree of cooking and the quality of the sap.
With its incomparable aromatic richness, maple syrup is a natural alternative to refined sugar and adds a distinctive flavour to pastries.
