This madeleine mix allows you to easily reproduce Chef Philippe's failproof madeleine recipe at home.

Praised by our community of pastry lovers and food enthusiasts, madeleines are a traditional, authentic French classic treat.
Manufactured in our laboratory in the Basque country, France, this instant mix for madeleines is made of healthy, quality ingredients.
Deliciously soft and fragrant, madeleines are an all-time favourite for children of all ages.
Thanks to this instant mix, preparing a delicious afternoon treat is easy as a breeze.

Instructions:
1. Melt the butter in a saucepan over low heat, then set aside to cool.
2. Pour the mix into a bowl. Add the egg, lemon zest, lemon juice, melted butter (cooled down) and the milk.
3. Combine until homogeneous and refrigerate for at least 15 minutes. You can prepare the madeleine mix the day before.
4. Grease a madeleine mould and pipe the preparation in the cavities up to 3/4.
5. Preheat the oven to 250°C (gas 8), then reduce to 200°C (gas 7) and bake for 10 to 12 minutes.
6. Release the madeleines from the mould while they are still hot. Set aside to cool.

My tip: The use of a piping bag will ensure the madeleines have a puffed, regular shape.
