Bouquet garni is a traditional and aromatic blend of herbs central to French cuisine. Max Daumin collaborates with local producers from the Eure region in France, who leverage their expertise to cultivate forty different varieties of aromatic plants. This specific fragrant blend is composed of six plants harvested in France: bay leaf, thyme, rosemary, fenugreek, coriander, and onion.
The predominant flavours are established by the rosemary, thyme, and bay leaf. These are complemented by fenugreek, which provides notes of celery, and coriander, which adds a light citrusy touch.
While traditional aromatic plants are often tied in a bundle, this loose herb blend is used in the same manner. Add the herbs at the start of the cooking process and allow them to simmer, ensuring the flavours diffuse thoroughly into your sauce, soup, stock, or stew.
