Tainori dark chocolate is balanced and offers fresh and unique notes of yellow fruits, then grilled dried fruits reminiscent of hot bread.
A very fine covering, expanding the range of Grands Crus Pure Origine, ideal for coatings, moldings, ganaches, creams, ice creams and sorbets.
Its name recalls the name of the inhabitants of the Dominican Republic: the Tainos, at the time when Christopher Columbus arrived on the island.

Applications:
Valrhona Tainori 64% dark chocolate goes particularly well with apricot, mango, mirabelle plum, peach, cinnamon, nutmeg, pepper, vanilla or honey.
Tempering curve: Cast iron (50/55°C), Crystallization (28/29°C), Work T3 (31/32°C)
