Peru 38% milk chocolate is a couverture chocolate produced by Republica del Cacao, a company founded in 2005 by the Chiriboga brothers in Quito.
This milk chocolate has a fresh profile with subtle notes of caramel and fruit.

Very fluid, it can be used in many recipes.
It will reveal all its qualities in mousses, ganaches, mouldings or coatings.
But it can also be used in pastries or bakery products.

Application:
Tempering curve: Melting (45°C), Crystallisation (26/27°C), Working T3 (29/30°C)

• Cocoa content: 38%
• Ingredients: sugar, cocoa butter, whole milk powder, cocoa mass from Peru, sunflower lecithin, natural vanilla extract
• Storage: reseal the product tightly to preserve its properties and store it between 16°C and 18°C, away from heat and humidity
• Net weight: 2,5kg
