This 38% Swiss milk chocolate from Villars is made with pure Saint Domingue cocoa beans and whole milk sourced exclusively from the canton of Lucerne.
The result is a smooth, creamy couverture with notes of cooked milk, caramel and subtle spices.
Paired with Leity 36% milk couverture, it forms a refined duo showcasing the richness of pure Swiss milk chocolate.
Uses:
Milcheli 38% milk couverture is ideal for moulding and chocolate bars. It is also suitable for mousses, creams, ganaches and coatings.
Temper like a classic milk couverture:
melting at 45°C, crystallisation at 25.5-26°C, working temperature at 29°C.
