The 71% Republica del Cacao dark chocolate is a blend of beans from the Dominican Republic, Peru and Ecuador.
A rich aromatic palette that gives a powerful couverture with woody and black fruit notes.
Its beautiful bitterness and astringency allow it to retain its very pronounced chocolate flavour.
Its fluidity gives it a wide variety of applications.

Tempering curve: Melt at 45-50°C, crystallise at 27-28°C, work at 30-31°C.

• Ingredients: cocoa paste, sugar, cocoa butter, sunflower lecithin
• Storage: seal the product tightly to preserve its properties and store between 16° and 18°C
