Gelcrem Cold is used to thicken liquids instantly without the need for heat.
Simply mix it into a mixture whilst cold to achieve a smooth, even texture similar to custard or crème anglaise.
This feature helps preserve the integrity of the ingredients, particularly in fruit-based mixtures, where the flavours remain fresh and unaltered by cooking.
Ideal for making cold creams, fruit fillings, sauces, thickened soups or no-bake pastries.
It also allows you to create preparations without eggs or dairy products, whilst retaining a rich and creamy texture.
Applications:
It works with all types of liquids (water, milk, juice, purées) and can replace traditional starches whilst offering a more stable and consistent texture.
The recommended dosage is generally between 40 and 80 g per kilogram, depending on the desired consistency.
It is also thermally irreversible, meaning that the resulting texture does not liquefy again when heated.
