The Gel Sphere is a powder-form gel specifically designed for creating transparent spheres with liquid centers or small flavor beads. These sweet or savory beads are intended to burst in the mouth, providing a refined element to both cooking and baking.

The gel is odorless and neutral in taste, allowing it to be easily dispersed in water to quickly produce a transparent and relatively elastic texture. This product is a 2024 release from Louis François, designed to facilitate creative culinary applications.

Method:
Ingredients:
4% Louis François Sphere Gel
5% sugar
91% water

  • Freeze the preparation at -18°C
  • Mix the Sphere Gel into the sugar, then mix into nto the water
  • Bring to the boil then leave to cool to around 70-80°C
  • Pierce the frozen centre and dip it into the bath. To create a more durable layer, dip the sphere twice into the bath
  • Gently place the sphere on a surface and leave to thaw completely
Note: the frozen spheres must not be too cold when dipped; around -18°C is an appropriate temperature.

The average dosage is 4 to 5% of the total weight.
