Erythritol is a natural sweetener from the polyol family (like xylitol, maltitol, and sorbitol).
Naturally present in small amounts in fruits such as melon, grapes, and pears, it is mainly produced through the industrial fermentation of glucose.
With a sweetening power equivalent to 60-70% of sugar, it can be used as a substitute in numerous pastry, confectionery, and chocolate applications.
It provides the roundness of sugar with significantly fewer calories.
Unlike certain synthetic sweeteners, erythritol contributes body and volume, helping to structure doughs.
It can also act as a preservative by reducing water activity.
Erythritol has a slightly "refreshing" taste, a sensation of coolness often appreciated in confectionery products.
Note, however, that it does not caramelise like sugar and will not brown during cooking.
