Profiber Stab 5 by Sosa is a stabiliser specially developed for ice creams and sorbets.
Made from 100% plant-based fibres, it contains no synthetic emulsifiers and is clean label, with no additives.
Applications:
Suitable for both fatty bases (nuts, chocolate, dairy products) and fruit bases, including acidic fruits.
Directions for use:
Mix with the cold or hot ice cream base (up to 85°C), stirring vigorously with an electric mixer to ensure complete dispersion.
Allow the mixture to rest in a cool place for 24 hours to hydrate fully, then store in the refrigerator. Churn and freeze the ice cream or sorbet as soon as possible.
Storage:
Keep in a dry place (humidity <60%), at a temperature between 15°C and 25°C. Protect from light and odours.
