Calcium lactate E327 is a white, non-hygroscopic powder.
It enriches foods with calcium, particularly vegetarian or lactose-free products.
It is found in juices, plant-based yoghurts, confectionery, etc.
It also acts as a firming agent for canned fruit and vegetables to preserve their crunchiness.
It is sought after in molecular cuisine for inverse spherification, along with sodium alginate, to create beads of juice or liquid sauces with a thin membrane.
Despite its name, it contains no lactose or dairy products.
The term 'lactate' comes from lactic acid, not milk.
