OvoFree Mousse is a cream-colored powder featuring foaming and stabilizing properties. It is a 100% plant-based innovation made from potato protein, hydrolyzed pea protein, and flax fiber, serving as a partial or total substitute for liquid egg whites in meringues and mousses. When rehydrated at 5% to 7%, it provides excellent volume and stability.
