The Silikomart Eden branches silicone mould offers two distinct patterns of small branches for decorative purposes.
Silikomart's Naturae range of moulds provides original, creative "trompe l'oeil" effects and can be used in the following ways:
Whipped creams, creams, mousses, sauces, jellied preparations.
For optimal results, freeze the preparation before releasing from the mould.
Not suitable for chocolate (too fragile).
Tuile dough recipe:
80g flour T55
100g egg whites
1 pinch of salt
50g melted butter
Water-soluble colouring powder or liquid (of your choice)
or vegetable juice (carrot, beetroot, spinach, parsley, etc.)
Whisk the flour with the egg whites, salt, and melted butter (cooled).
Line the mould cavities with this mixture, ensuring that the dough fills the hollows. Use an angled spatula for this.
Remove any excess pastry by scraping the surface of the silicone mould to prevent spillage.
Bake in a preheated oven at 170°C, preferably in a fan oven, for 7 minutes.
Release from the mould straight out of the oven.
Set aside in an airtight container until ready to serve.
