Recipe idea:
Chocolate and spiced tea match particularly well.
Prepare a chocolate cake by melting 100g of dark chocolate with 100g of salted butter. 3 eggs, separate yolks from whites and beat the whites until stiff. Blanch the egg yolks with 85g of sugar.
Add the mixture to the egg whites then gently incorporate the chocolate/melted butter. Pour into a mould and bake for 20/25 minutes at 180°C. Meanwhile, prepare a green tea and spice icing by infusing 15g of green tea with spices in 250ml of milk and 15ml of water for 10 minutes. Filter and let cool. Incorporate 1 heaped teaspoon of flour then cook over medium heat while stirring until thickened. Let cool.
Beat 100g of butter and 150g of sugar until you obtain a cream and add the green tea preparation with spices. Whisk until the mixture is thick and smooth. Fill a pastry bag with the spiced green tea frosting and refrigerate for 15 to 20 minutes.
Frost the baked, cooled and unmoulded chocolate cake.
