Assembling entremets, mousses and Opéra cakes into 2 or 3 regular layers is now a piece of cake!
This unique stackable mousse frame system allows you create ready-to-cut desserts with beautiful, precise layers while saving a lot of time on the assembly operation.
Use extra frames to insert additional layers of biscuit or mousse.
1 - Place the stainless steel tray on a flat surface, then place the first frame of your choice.
2 - Fill the first frame with the preparation.
3 - Even the surface with a spatula. According to the preparation used, place in the fridge to set.
4 - Place the second frame on top, then fill with the second preparation. Even with a spatula.
5 - Repeat the operation with the third frame for the third preparation. If necessary, place the frame set in the freezer.
6 - Gently lift the frames, one by one. (If you need to heat the sides a little, use a heat gun instead of a blow borch.)
This frame set offers endless combination possibilities and can easily replace 4 traditional frames:
1 - mousse frame: the total height of the 3 frames stacked together is 45mm, i.e. the height of traditional mousse frames.
2 - entremets or cake frame: the traditional height of 35mm can be obtained by stacking together the red and black frames. If you wish to make three layers, stack 1 red and 2 yellow frames together (extra yellow frame sold separately).
3 - Opera frame: combine the red and yellow frames.
4 - 35 x 35cm frames designed for ganaches that can be cut using a guitar cutter.
