Invert sugar is a white paste used in pastry and confectionery to slow down the crystallisation process of sugars and gives a smoother texture in ice cream, ganache, etc.
It also improves shelf life by preventing the absorption of moisture.
Gluten free (invert sugar paste is produced from beet).
Ready to use, add 2% to 5% to the pastry preparation.
