This large fruit from the citrus family is not particularly tasty when eaten raw.
When candied though, citron becomes delicious with unique flavours between lemon and grapefruit.
These carefully selected citrons are picked at their peak ripeness and slowly candied in cubes of 8 x 5mm thanks to the know-how tradition of master confectioner Cruzilles.
This slow candying method is what gives the citrons their exceptional flavour and texture.
