The fruity blak olive oil is produced from the "cornicabra" variety, harvested in the Spanish region of Castilla-la-Mancha. They are harvested late in the season and fermented.

After more than ten years of tasting sessions carried out all over the world, his expertise is based on an in-depth knowledge and understanding of different soils, standards and regulations.
In 2009, he created Moulin de Mech at the heart of the Bouhedma nature reserve, protected from all forms of intensive farming and designated as a biosphere reserve by UNESCO. He set up a modern crushing unit there; a laboratory in the centre of the olive grove. This is how the range of 18:1 olive oil was born.
