This forest mushroom coulis by Maison Borde is a 100% natural concentrate of wild mushrooms.
Dilute this coulis with 5 to 12% of your preparation to infuse your recipes with delightful notes of forest mushrooms, selected with care in France.

Enhance veloutés, sauces, or use it for deglazing at the end of cooking. Add flavour to whipped cream, risotto, or vegetable purées. Dilute in 5 to 12% of preparation to achieve the desired flavour intensity.

Forest mushroom béchamel recipe (for 1 litre):
70g butter
70g flour
1 litre of milk
Pinch of Espelette pepper
3 to 4 tablespoons forest mushroom coulis

Bring the milk to a boil.
In the meantime, melt the butter in a saucepan.
Add the flour all at once.
Stir to prevent lumps, cooking for a few minutes without browning.
Pour the boiling milk over the warm or cold roux, whisking well.
Bring back to a boil. The béchamel should thicken after a few minutes. Keep stirring.
Once happy with the consistency, stop cooking, add a pinch of Espelette pepper as well as forest mushroom coulis to taste. Mix well.

  • Store in a dry, aired place at room temperature.
  • Once opened, store in the fridge and consume within 7 days.
  • Ingredients: mushroom mix 91% (butter-foot bolete, oyster mushrooms, cep mushrooms, girolle mushrooms, button mushrooms, shiitake mushrooms, bay bolete), sunflower oil 4%, shallots 4%, salt 1%.
  • Origin: packaged in France from imported mushrooms
  • Best before date: 24 months
