Tomatoes with Cucumbers

Technical stages for Tomatoes with Cucumbers :

• Peel the cucumber. Mince half of it into thin slices and dice the rest.
• Have the cucumber dice to sweat their water out in coarse salt for 15 minutes.
• Wash the tomatoes. Cut the top and hollow them out. Sprinkle the inside with salt and flip them over to let the water run out.
• In a large bowl, mix the vinegar, mustard, oil, salt and pepper.
• Wash and finely chop the parsley.
• Rinse the cucumber dice under running water. Put them in the dressing and fill up the tomatoes with it. Put the tomatoes on a service dish. Put the cucumber slices all around and sprinkle with chopped parsley. Keep warm until serving.
