Technical stages for Tarte Tatin with Pears :
- In a baking pan, make a blend caramel with sugar and butter directly on the heat.
- Once well coloured, peel and seed the pears.
- Cut them in half lengthwise and cut each half in three pieces.
- Line the pears in the bottom of the pan.
- Place the mold on heat and cook the pears about 10 minutes so that they soak in well the caramel.

- Line the mold with the pastry and stick the sides beteween the mold and its sides.
- Poke the surface of the pastry using a fork.
- Bake 30 minutes in hot oven, 180°C.
- When finished, remove immediately the tart onto a serving dish by placing the mold on it and flipping it in one movement. Watch for splashes !!!
