Ingredients for Caramelized Pumpkin Tart with Cinnamon :

  • 250 g sweet dough
  • 500 g pumpkin flesh
  • 2 apples "Granny Smith"
  • 50 g brown sugar (cassonnade)
  • 8 lumps sugar
  • 50 g butter
  • 1/4 tsp powdered cinnamon

  • Peel the apples and dice them.
  • Dice also the pumpkin flesh.
  • Place everything in a saucepan.
  • Add brown sugar, butter and cover with water.
  • Stir during cooking so that the mixture does not stick to the bottom.
  • Cook 25 minutes until the pumpkin is well soft and there is no more water left in the saucepan and the pumpkin begins to caramelize.
  • Mash this preparation using a fork.
  • Add cinnamon and leave to cool.
  • Roll out the sweet dough
  • Line a pie shell.
  • Prick the bottom of the tart.
  • Prebake the pie shell for 20 minutes.
  • Fill the tart with pumpkin puree.
  • In a saucepan, make caramel using the lumps of sugar.
  • Dip in the caramel two forks held back to back and form strings above the tart.
  • Serve immediately.
