Technical stages for Tart Flambée with Mangos :
- the puff pastry and cut out a disk larger than the diameter of the tart mold.
- Caramelize the sugar and butter in the bottom of the mold.
- Peel the mangos and slice the flesh in strips.
- Line the slices of mango in the tart mold.
- Sprinkle with cinnamon and sugar.
- Cook the fruit on the stove for about 10 minutes.
- Cover with the rolled out puff pastry.
- Fold in the sides down to the bottom of the mold.
- Bake in hot oven, 180°C for 30 minutes.
- When finished, remove from the mold when hot.
- Baste with inflamed very hot rum.
- Serve immediately with ice cream or sorbet.
