Ingredients for Tart Flambée with Mangos :

  • 3 mangos
  • 300 g puff pastry
  • 80 g butter
  • 100 g sugar
  • cinnamon
  • vanilla sugar
  • dark rum

Technical stages for Tart Flambée with Mangos :

  • Roll out the puff pastry and cut out a disk larger than the diameter of the tart mold.
  • Caramelize the sugar and butter in the bottom of the mold.
  • Peel the mangos and slice the flesh in strips.
  • Line the slices of mango in the tart mold.
  • Sprinkle with cinnamon and sugar.
  • Cook the fruit on the stove for about 10 minutes.
  • Cover with the rolled out puff pastry.
  • Fold in the sides down to the bottom of the mold.
  • Bake in hot oven, 180°C for 30 minutes.
  • When finished, remove from the mold when hot.
  • Baste with inflamed very hot rum.
  • Serve immediately with ice cream or sorbet.
