Technical stages for Florentine Steaks :
- Remove the fat form the steaks if necessary.
- Mix the olive oil, 4 tablespoons of melted butter and the pepper in a large bowl. the steaks in it for 30 minutes, turning them 2 or 3 times.
- BBQ the steaks or cook them on a very warm grill (beware not to burn the meat), according to how your guests like their meat better (rare, medium rare, done). Salt the pieces while they are cooking.
- Melt the remaining butter, add the lemon juice and chopped parsley.
- Put the steaks on a warm service dish and cover with sauce.
- Serve warm.
