Technical stages for Cantal Soup :
- the onions. in butter or lard. with broth, or boiling water. Salt and add pepper liberally.
- Simmer for 30 minutes.
- Slice the bread and mince the cantal in thin strips.
- Put the bread and cheese in layers in a baking pot. Pour the warm broth on top of it, with the onions. Cover and cook for 30 minutes in the oven at medium heat.
- Serve immediately.
