Ingredients for Potato Soufflé :

  • 1.2 kg potatoes
  • 3 dl milk
  • 80 g butter
  • 2 eggs
  • 60 g grated swiss cheese

Cook the potatoes à l'anglaise.

Once cooked, pass them in the press-purée.

Add the 2 egg yolks butter, the Swiss cheese and the hot milk.

Beat the eggs firm.

Delicately add the firm egg whites to the potato mixture.

Pour in a buttered soufflé pan.

Bake in hot oven, 180°C for 20 minutes.
