Sole in White Wine
  • For : 6 servings
  • Time : 45 minutes
  • Difficulty : easy

For this recipe, you need :

  • 6 soles
  • 20 cl dry white wine
  • 80 g butter
  • 4 shallots
  • 4 tomatoes
  • salt
  • pepper

Technical Stages :

  • Dress the soles.
  • In a large pot with thick bottom, melt the butter. Cook the slightly floured soles on both sides in the warm butter.
  • Add the ciselered shallots, white wine, salt, pepper, and simmer for 15 minutes.
  • Meanwhile, peel, seed and crush the tomatoes.
  • When the soles are cooked, add the crushed tomato an dlet reduce for a few minutes.
  • Season if needed.
  • Serve immediately.
