Bourguignonne Sauce

For this recipe, you need :

  • 35 cl red wine
  • 2 shallots
  • 35 g white mushrooms
  • 1/2 onion
  • 60 g butter
  • 10 g flour
  • salt, pepper
  • 1 thyme sprig
  • 1/2 bay leaf

Technical Stages :

  • Reduce the red wine by half, combining it with the shallots, onion and mushrooms. Add the thyme and bay leaf.
  • Filter through a chinois.
  • Over low heat, bind with 20 g kneaded butter, then finish with the remaining butter.
