Technical stages for Meat Samoussas :
- the flour and salt together. Combine it with the butter in order to make crumbs. Add the milk and knead the dough who must turn soft, but stay firm. Cover and let sit.
- Finely the onion, tomato, chili pepper, coriander. Crush the garlic. Fry the onion and garlic in a pot with a bit of oil for about ten minutes, then add the chili pepper and cook for 2-3 more minutes.
- Add the ground meat and cook until golden. Add the tomato, corianderm chili, curcuma and garam massala.
- Add salt and let simmer for about 20 minutes, adding a bit of water if necessary. Add the lemon juice, stir and let cool.
- Split the dough in ten parts of equal size.
- Level each of them into a really thin pancake. Sprinkle with flour to make it easier. Cut in two semi-circles. Drop a spoonful of meat in the center and fold in a triangular shape after moistening the edges.
- Cook in frying oil until golden. Serve warm with chutney or yogurt.
