Ingredients for Rouille 2 :

  • 5 garlic cloves
  • salt
  • powdered saffron
  • 1 baked potato
  • 4 egg yolks
  • 1 litre olive oil
  • cayenne pepper
  • tomato paste
  • red chili pepper or harissa

Technical stages for Rouille 2 :

  • Crush the garlic cloves with the cooled baked potato, salt and saffron. You may also add red chili pepper or harissa paste (optional).
  • Add the egg yolks and whisk, slowly and continuously adding the oil.
  • Same technique as for mayonnaise.
  • Season if needed.
  • NOTES:
  • If the sauce is not colourful enough, you can add a bit of tomato paste or powdered saffron.
