Sausage Rougail

Ingredients for Sausage Rougail :

  • 750 g fresh spicy sausages
  • 6 small onions
  • 8 small tomatoes
  • 4 green chili peppers (optional)
  • 1 little piece of ginger
  • 4 tablespoons oil

Technical stages for Sausage Rougail :

  • Prick the sausages with a fork, 3 or 4 times on the whole length. Cook in salted simmering water for 15 minutes.
  • Meanwhile, mince the onions and tomatoes.
  • Crush the chili peppers, ginger and salt together.
  • When the sausages are cooked, cut them in 3 or 4 pieces each.
  • In a pot, seal the sausages over strong heat for 3 minutes. Add the onions, blend, add the crushed mix and mix again.
  • Add the tomatoes, stir well, and cook over medium heat.
  • Serve with creole rice.
  • Note:
  • There is barely any sauce in this dish, but it should not be too dry either.
