Low Fat Ratatouille

Ingredients for Low Fat Ratatouille :

  • 500 g courgettes (zucchini)
  • 500 g eggplant
  • 2 tablespoons flour
  • 500 g onions
  • 500 g green pepper
  • 750 g tomatoes
  • 1/2 bunch parsley
  • 5 garlic cloves
  • 3 thyme sprigs
  • 2 tablespoons olive oil
  • 10 basil leaves
  • salt
  • pepper

Technical stages for Low Fat Ratatouille :

  • Wash the courgettes and eggplants without peeling them. Mince them in thick slices. Put them in two spearate bowls and sprinkle with flour.
  • Peel and slice the onions. Remove the stems and seeds from the bell peppers, cut them into strips.
  • Peel and seed the tomatoes. Peel and chop the garlic cloves. Take the parsley leaves off their stems.
  • Pour the oil in a large pot. Sweat the onions in it. When golden, add the vegetables, salt, pepper, herbs. Mix well. Cover the pot and cook over medium heat for 1 hour.
  • After 1 hour, uncover and stir well. Cook for an additional 20 to 30 minutes, stirring frequently so that the excess water evaporates.
