Ham Quiche

Ingredients for Ham Quiche :

  • Pastry:
  • 250 g flour
  • 125 g butter
  • water
  • salt
  • Filling:
  • 150 g Bacon
  • 150 g lean cooked ham
  • 1/4 litre crème fraîche
  • 1/4 litre milk
  • 4 eggs
  • salt
  • pepper

Technical stages for Ham Quiche :

  • Make a shortcrust pastry.
  • Leave to rest in the fridge for half an hour.
  • Thinly dice the bacon.
  • Blanch in boiling salted water for a few minutes and drain.
  • Thinly chop the ham.
  • In a bowl, beat the eggs along with milk and crème fraîche.
  • Season with salt and pepper.
  • Roll out the pastry and line in a buttered tart mold.
  • Sprinkle the bottom of the tart with chopped ham and bacon dices.
  • Pour the prepared mixture.
  • Bake in hot oven at 180°C for 30 to 35 minutes.
