Chicken in Vinegar

Ingredients for Chicken in Vinegar :

  • One 1.5 kg Bresse chicken
  • 75 g butter
  • 20 dl tarragon-flavoured wine vinegar
  • 1 teaspoon flour
  • salt
  • pepper

Technical stages for Chicken in Vinegar :

  • Cut the chicken into pieces.
  • Fry in 50 g butter for 5 minutes, Season.
  • Deglaze with half of the vinegar. Cover and let simmer for 30 minutes.
  • Transfer to a serving dish.
  • Pour the remaining vinegar in the skillet and reduce for a few minutes.
  • Meanwhile, prepare kneaded butter with the remaining butter and flour. Combine gently this butter with the chicken sauce.
  • Season to taste and coat the chicken with the sauce.
