Chicken in Yellow Wine

Ingredients for Chicken in Yellow Wine :

  • one 1.5 kg country-raised chicken, cut in eight pieces
  • 250 g fresh morels or 75 g dried ones.
  • 1/2 bottle yellow wine (vin jaune)
  • 20 cl crème fraîche
  • 2 shallots
  • 2 tablespoons oil
  • 80 g butter
  • 1 tablespoon vinegar
  • 1 pinch nutmeg
  • salt
  • pepper

Technical stages for Chicken in Yellow Wine :

  • Season the pieces of chicken with salt, pepper and nutmeg.
  • Heat up the butter and oil in a casserole dish, then brownthe chicken for a few minutes, until golden. Add the chopped shallots and 1/2 glass yellow wine.
  • Cover and let simmer for 20 minutes.
  • Clean the morels. If they are big, halve them lengthwise. Wash them in water with vinegar, and rinse a few times under running water.
  • Drain and pat dry. If the morels are dry, rehydrate for 15 minutes in lukewarm water, then drain.
  • Warm up the remaining yellow wine and pour it into the pan. Add the morels. Stir gently. Let simmer uncovered for 15 minutes.
  • Set the chicken aside but keep it warm. Add cream and let reduce for 5 minutes.
  • Coat the chicken with wine sauce and serve warm.
