  • Peel and cut the potatoes in slices with a mandoline.
  • Dip them in cold water and mix to remove as much starch as possible.
  • Drain and pat dry.
  • Dip in really warm frying oil and let them get a golden color, constantly turning with a skimmer, to prevent them from sticking to each other.
  • Drain, salt and serve.
