Potatoes Amandines
  • Time : 30 minutes
  • Difficulty : easy

For this recipe, you need :

  • 1.5 kg potatoes
  • 200 g butter
  • 1 or 2 eggs
  • 3 or 4 egg yolks
  • salt, pepper
  • nutmeg
  • sliced almonds
  • 1 or 2 whole eggs
  • salt, pepper

Technical Stages :

  • Peel and wash the potatoes. Dice and quickly the boil.
  • Drain immediately to prevent them from soaking up with water. Put in a baking sheet for a few minutes to dry off.
  • Puree. Put the mashed potatoes in a pot to dry at medium heat.
  • Combine with butter and season.
  • Away from the stove, combine with the eggs and mix well.
  • Shape the mixture into balls.
  • Prepare a salted batter and season.
  • Dip the balls into the batter and roll immediately in the sliced almonds.
  • Refrigerate for a moment, then fry.
