Technical stages for Caramelized Pinions :
- Mix the pinions with the boiling syrup at 116°C or 240°F.
- Keep for 2 hours away from heat.
- Drain the pinions. Spread on a baking sheet and broil in an oven at 180/200°C or 356/392°F until caramelized.
- Turn from time to time to prevent them from burning.
- Spread on a sheet of baking paper and leave to cool.
- Keep in a sealable plastic container.
