Petit Salé with Lentils

Ingredients for Petit Salé with Lentils :

  • 1 kg small green lentils
  • 1 pork hock in salt
  • 600 g salted pork belly
  • 3 carrots
  • 2 small leeks
  • 3 garlic cloves
  • 1 onion spiked with 3 cloves
  • 1 bouquet garni
  • salt
  • pepper

Technical stages for Petit Salé with Lentils :

  • Sort the lentils and soak them for 4 to 5 hours.
  • De-salt the meats, changing frequently the water, or under cold running water.
  • Put the meat in a large pot and cover with cold water. Slowly bring to a boiling point.
  • Skim, add 2 of the carrots and the peeled and washed leeks. Simmer for 1 h 30.
  • Meanwhile, drain and rinse the lentils.
  • Pour them in another large pot. Add the remaining carrot cut in slices, the garlic, onion with cloves and the bouquet garni. Start bringing to a boiling point, then simmer for 30 minutes.
  • After that time, pour the lentils in the meat pot and cook over very low heat for an hour. Season if needed. Remove the bouquet garni and garnish the service dish with lentils on top of which the meats will be arranged.
  • Serve hot.
