Smoked Salmon Pasta

For this recipe, you need :

  • 350 g smoked salmon
  • 25 cl double cream
  • 3 tablespoons olive oil
  • 1 bunch fresh basil
  • 500 g fresh pasta
  • salt
  • pepper

Technical Stages :

  • Cut the smoked salmon in strips. Mix them in a plate with the cream.
  • Put this plate on a boiling bain Marie in order to heat up the mix.
  • Cut the basil leaves and mix them with 2 tablespoons oil. Add this basil oil to the cream mix.
  • Cook the pasta in a large pot of salted water with 1 spoon oil, for 4 to 6 minutes according to your taste (al dente or not).
  • Drain and pour in the plate. Mix well. Add pepper, mix again and serve warm.
  • SLIM VERSION :
  • Use light cream.
  • Use chopped basil rather than basil oil.
  • A very balanced dish :
  • proteins and omega 3 from the salmon
  • proteins and glucids from the pasta
  • low level of lipids, but insaturated fatty acids.
