Prepare all the ingredients.
Sift the flour. Shape the flour into a fountain.
Add the eggs, sugar and salt in the middle.
Start whisking, gradually pouring the flour.
While mixing, gradually add the cold milk and water. Mix all the ingredients until the flour is completely absorbed in the batter.
Whisk firmly to obtain a fluid and homogeneous mixture. Pass it through a chinois or a fine sieve to eliminate chunks.
Melt the butter.
Add it to the batter. Blend well. Keep the batter aside until you start baking the crepes.
