Quail Eggs, Aurore Sauce

For this recipe, you need :

  • quail eggs
  • white bread
  • chervil
  • mayonnaise
  • brandy
  • ketchup
  • tomato paste

Technical Stages :

  • Deposit half a hard-boiled quail egg (2-3 minutes on a toasted white bread disc. Coat the whole thing with aurore sauce. Keep refrigerated.
  • Decoration: chervil sprigs.
  • Aurore Sauce :
  • Blend mayonnaise, brandy, ketchup and tomato paste. Quantities may vary according to taste.
