Ingredients for Leek Mousseline :
2 kg leeks
200 g heavy cream
juice of 1 lemon
salt
pepper
Technical stages for Leek Mousseline :
Peel and wash carefully the leeks. Cut them into pieces. Boil them until tender. Drain thoroughly to eliminate a maximum of water.
Purée the leeks.
Put the mashed leeks in a potm add the lemon juice and cook over low heat. Season with salt and pepper.
Add the heavy cream and stir.
Serve warm.
