White Beans with Tomato Sauce

Ingredients for White Beans with Tomato Sauce :

  • 1.2 kg white beans or 300 g dried beans
  • 3 onions
  • 2 cloves
  • 1 carrot
  • 2 garlic cloves
  • 1 bouquet garni
  • 2 tomatoes
  • 2 tablespoons olive oil
  • 1/2 litre white wine
  • 1 tablespoon tomato paste
  • 1 tablespoon chopped parsley
  • salt
  • pepper

Technical stages for White Beans with Tomato Sauce :

  • Soak the dried beans in cold water.
  • Drain and put them in a pot of cold water. Cook for 10 minutes. Drain.
  • Cook them for an hour with two onions (with the cloves stuck in), carrot, one garlic clove, and the bouquet garni.
  • If fresh, boil directly the white beans in the same manner.
  • ciseler the 3rd onions and the garlic. Peel and seed the tomatoes. Dice them.
  • Warm up the oil and sweat the onion in it. Add the white wine and reduce to half of its original volume.
  • Add the tomatoes and tomato paste, the garlic, salt and pepper.
  • Cover and cook for about 15 minutes.
  • Drain the beans and mix with the sauce. Sprinkle with chopped parsley and serve.

  • The tomatoes bring carotens, the olive oil brings polyinsaturated fatty acids, the beans have fibers.
